Olive Oil is the healthiest edible oil you could cook with. Olive Oil is very good for your heart, as it has low saturated Fatty acids and a high Monosaturated Fatty acids (MUFA) density. SFA's are bad for your heart as they get deposited on arteries causing blockages. High Monosaturated Fatty acids (up to 77%) or "good" fat per table spoon makes Olive Oil extremely beneficial in resisting variety of diseases as compared to other oils, such as sunflower & safflower (Kardi) oils, which have a high polyunsaturated Fatty acids (PUPA) content. Olive Oil reduces clotting at choke points in the circulatory system. Most importantly Olive Oil is naturally 100% cholesterol free and thus helps in active cholesterol management. Olive Oil contains substantial amount of vitamin E, a valuable antioxidant. Not only does this antioxidant protect the oil from growing rancid, it may help inhibit cholesterol absorption. Olive Oil is more stable for cooking and frying, as even at 190°C it does not affect its taste, odour and properties.
